Tripe

Tripe belongs to the oenogastronomic heritage of all the peninsula of Italy, and it dates back to ancient Rome.
Although it is the basis of many rich and nutritious dishes, it has often been considered a “poor” kind of food until recently, being quite cheap. However, today tripe has its place among the most valued foods of our culinary tradition.
It is part of countless recipes, to please everyone’s taste, in all regions of Italy and with a variety of different ingredients.

Tripe with vegetables

  • Ingredients: bovine tripe 50%, tomato sauce 17% (tomato, tomato juice, acidity adjuster: citric acid), extra-virgin olive oil, vegetables in varying portions (carrots, celery, marrows, potatoes, onions), white wine (contains sulphites), salt, spices.

  • Cooking time: 3 minutes in the microwave or in a pan.

  • Packaging: vacuum-sealed in thermosealed trays.

  • Shelf life: 40 days.

Il Salame di Trippa di Moncalieri

Il Salame di Trippa di Moncalieri è una rinomata specialità a base di trippa suina, inserita nei P.A.T. (Prodotti Agroalimentari Tradizionali) italiani.
Il prodotto crudo è lavorato quotidianamente all’interno di uno stabilimento piemontese per la macellazione e la trasformazione delle carni suine; la lavorazione è effettuata da personale qualificato, che con estrema cura sceglie, separa, sgrassa ed elimina le parti non idonee per garantire all’interno del salame solo materia prime selezionate.
Il Salame de La Tripa ‘d Muncalè è prodotto dall’omonima Azienda: entrambe fanno parte della storia di Moncalieri e dell’enogastronomia non solo locale, ma estesa anche a tutto il Nord Ovest d’Italia. L’Azienda vanta una lunga tradizione nella lavorazione della trippa ed è leader di settore in Italia e in Europa, oltre ad essere l’unica ad effettuare tutte le fasi di lavorazione e di trasformazione della trippa.
La provenienza della materia prima usata e trasformata, sia suina che bovina, è in gran parte legata ai macelli piemontesi, dove spesso è il personale dell’Azienda ad occuparsi in prima persona della lavorazione di tutta la materia prima grezza.

Il Salame di Trippa ha un sapore leggero e gustoso: è un ottimo antipasto servito freddo, tagliato a fette sottili e condito con olio extravergine di oliva, limone, pepe o altre spezie che ne esaltano il gusto, un fresco spuntino, un ottimo aperitivo e una base per squisiti piatti caldi, come richiede la tradizione secolare legata alla trippa.
È venduto intero, affettato in confezioni da 200 g o tagliato alla julienne, accompagnato da verdure fresche ed olive in una gustosa ricetta all’interno di una comoda e pratica vaschetta da 200 g, diventando così un ottimo piatto ed una monoporzione pronta all’uso.
