Tripe with tomato sauce


700 g tripe, 300 g onions, tomato puree, capers, salt, oil, pepper and basil.


Boil the tripe with a big onion for about one hour. Meanwhile, prepare the tomato sauce. Finely slice the remaining onions and lightly fry them in a frying pan with a little oil. Once the onions are lightly fried, add the tomato puree and some capers. Stir well and add some salt and some pepper.

Drain the tripe and add it to the sauce. Let the mix simmer for about 30 minutes. Serve warm, with croutons if desired.
