Tripe salami pancakes
Ingredients, 4 servings
300 g tripe salami, 2 eggs, 150 g flour, 1 tablespoon chopped parsley, 250 ml olive oil, nutmeg, grated Parmesan cheese, salt, pepper
Preparation
Beat the eggs, then add the parsley, the grated Parmesan cheese, some nutmeg, salt and pepper; mince the tripe salami and add it to the egg batter.
Use the mix to prepare flattened balls, then dip them in flour and fry them in boiling oil, browning them on both sides.
