Tomato tripe

Ingredients, 4 servings

1.2 kg pre-boiled tripe, 1 onion, 1 celery stalk, 1 teaspoon salt, 2 tablespoons olive oil, 1 glass white wine, 400 g tomato puree, pepper as needed.


Clean the onion and finely slice it. Cut the tips off the carrot and accurately clean it. Remove the celery stalk's filaments. Wash, drain and finely chop all the vegetables.

Lightly fry the chopped vegetables in a large frying pan with the oil. Add a ladle of water and let the mix simmer on low heat for about 10 minutes.

Cut the tripe into thin strips, add it to the lightly fried vegetable mix and lightly fry it on high heat for about 5 minutes. Add the wine and let it dry, then add some salt and some pepper to suit your taste.

Add the tomato puree and some hot water, then put a lid on the pan and turn the heat down as much as possible. Let the mix simmer for over one hour, the add some more pepper. Serve it very hot with some maize porridge (polenta) as a side dish.
